Breakfast is my favourite meal of the day, and Saturday breakfast is my favourite breakfast of the week. There’s that little bit of extra time to make something really special and even more time to enjoy it which is always good.
This weekend I’ll be making my yummy, healthy breakfast “muffins”
What you’ll need:
- Greased muffin tin
- 6 eggs, whipped
- Bacon, sliced into small pieces (you can leave out the bacon to make them veggie)
- Spinach, cut into small pieces
- Green peppers, cut into small pieces
- Grated cheese
- Salt and pepper to taste.
Pour the whipped eggs into the muffin tin, halfway filling each of the sections. Add in the ingredients as you see fit, as much or as little of each as you wish. I put the peppers in first then pile the rest of the ingredients on top. I then sprinkle the top with chia or flaxseeds and pour a little more egg mixture over the top to fill the rest of the muffin tins.
Bake in the oven for 10 minutes, or until they become golden, then dig in!!
They can be eaten hot or cold and if you have leftovers, pop them in the fridge and save for up to 3 days! Simple 👌
