Healthy Sweet Potato Crisps

Crisps are great, but we know how bad a typical bag of crisps can be for your health, so here’s my healthy alternative to standard crisps. They are baked rather than fried and are a great source of vitamins. I make these to snack on instead of chocolate and sweets and they really hit the spot because they are slightly sweet.

  
These crisps are both delicious and easy to make, so let’s get going!

What you will need:

  • Sweet potatoes (I used 3 but you can use as many as you like)
  • Olive oil
  • Dried Rosemary 
  • Dried Thyme 
  • Salt
  • Pepper

So first of all, preheat your oven to 400 degrees (gas mark 5). You will need to wash the potatoes and cut them into thin slices to get the best crisp shape. The large slices can be cut in half to make them a little bit crispier.

  
Once cut into slices, line a baking tray with tin foil and place the slices on in a thin layer, trying not to overlap them too much. 

Now drizzle all over with olive oil (or use olive oil spray) and sprinkle on some thyme and rosemary to cover the slices. The olive oil will carry the herbs around the tray coating all the slices once you start baking.
  
Before popping them in the oven, sprinkle on a bit of salt and pepper to add extra flavour, then put them in the oven on the middle shelf. Allow them to cook for 20 minutes, turn them over and continue to cook for another 20 minutes. Now just take them out of the oven and allow to cool before tucking in!! Delicious!
